Winemaking
The mission of Kings Hill Cellars is to enable its members to produce custom award-winning wines. Our wine consultant, Richard Mansfield, has 27 years experience in both grape growing and ultra-premium wine making. He will teach and assist you through all the critical steps, while our cellar staff will handle all the supportive tasks - leaving you free to learn and express the art of winemaking. Before starting, each Member will “define” their wine together with Richard. He will then help you select the process to best bring out the characteristics you desire from the varietal you have chosen.
As a Member, you will need to be present to “crush” your grapes and initiate fermentation (a Saturday usually in late September or early October). If you are making red wine, you also need to return to “press” the juice from the “must” (a Saturday one to three weeks later, depending upon how long you choose to extend the maceration on the skins). Members will crush, ferment, press, rack, filter, make additions and bottle their wine under the guidence of experienced winemakers. At the final event, attend one of our bottling parties to package your wine with your choice of bottle, cork and your own personalized label.
